A Beginners Gingerbread Cookies Recipe Guaranteed To Get The Family Together

Christmas is such a magical time of the year and if you’re anything like us, one of our favourite activities to do each year is holiday baking – And creating the perfect Gingerbread Cookie is on the top of our bake list!
As not all of us hold the title of baking queen, we have just the beginners guide and recipe to making the perfect gingerbread cookie from scratch, thanks to our friend Amanda Cordony,

GINGERBREAD COOKIES RECIPE

Makes: 12 Gingerbread Cookies | GF NF

Prep Time: 10 minutes (plus resting)
Cook Time: 20 minutes

Ingredients:
1 ½ cups plain gluten-free flour
100g softened butter
½ cup brown sugar or coconut sugar
1 teaspoon ginger powder
1 teaspoon bi-carb soda
Garnish: dried rose petals
 
Method:
Step 1. Preheat the oven to 170C fan and line a flat baking tray with parchment paper.

Step 2. In a large bowl add flour, butter, sugar, ginger and bi carb soda. Mix into dough with your hands. Wrap in clingwrap and place in the fridge for 20 minutes to rest.

Step 3. Roll the dough into 12 round balls and gently flatten with the palm of your hand. Make an indent with a fork and place onto the lined baking tray.

Step 4. Bake for 20 minutes on 170C. Set aside to cool completely. Serve with edible rose petals.
 
Step 5. Enjoy!
GINGERBREAD COOKIES RECIPE

Makes: 7 Gingerbread Man Cookies

Prep Time: 5 minutes (plus resting)
Cook Time: 20 minutes

Ingredients:
1 ½ cups plain gluten-free flour
100g softened butter
½ cup coconut sugar
1 teaspoon ginger powder
1 teaspoon bi-carb soda
 
Method:
Step 1. Preheat oven to 170C fan. In a bowl add flour, softened butter, coconut sugar, ginger and bi-carb soda. Mix into a round ball with your hands. Wrap in cling wrap and place into the fridge for 20 minutes.

Step 2. Roll the dough out between two sheets of baking paper. For a 10 x 12cm gingerbread man cutter you will get 7 gingerbread men.

Step 3. Peel the outside dough away from the gingerbread cut-out and repeat the process. Do not move the gingerbread men. Slide the parchment paper with the gingerbread men onto a tray and place it in the freezer to set for 10 minutes. Then bake for 20 minutes at 170C.

Step 4. Set aside to cool completely before you remove them from the baking tray.
 
Step 5. Enjoy!
