A quick, easy and delicious recipe, courtesy of Wholesome Cook.
What you need:
450g raw cashews
12 Medjool dates, pitted
1 teaspoon vanilla extract
½ teaspoon cinnamon
¼ teaspoon ground cardamom
85g dark chocolate, chopped and melted
1 tablespoon cocoa powder
Process the cashews in a food processor on high, for 6 minutes or until the mixture resembles a crumbly cookie-dough-like consistency. Add pitted dates and pulse until the dates are incorporated into the mixture. Add vanilla extract, cinnamon, cardamom and melted chocolate. Process on medium-high speed until combined. Take a teaspoon of the mixture at a time and roll into a ball. Place on a large plate or platter. Once all truffles are rolled, dust with cocoa powder. Store in an airtight container in the pantry or fridge for up to 2 weeks.
Pop a few of these into little cellophane bags with some ribbon or twine and you’ve got a sweet treat for friends and colleagues! (Or you could grab a cuppa, turn on Netflix, and enjoy them all to yourself!)
