What you need:

300g baby leaf salad mix
2 large mangoes
20 large cooked & peeled prawns
2 teaspoons hemp seeds
2 tablespoons apple cider vinegar
2 tablespoons olive oil
½ teaspoon vanilla extract
Pinch salt
Black pepper, to serve



Arrange salad mix in a large bowl. Cut mango cheeks off the seed and using a sharp knife cut the flesh into strips, without cutting through the skin. Using a spoon, scoop the flesh out onto a plate. Repeat with the remaining cheeks and sides. Arranged mango strips on top of the salad leaves and top with prawns. Mix together the hemp seeds, vinegar, olive oil, vanilla and salt. Drizzle over the salad. Season with freshly cracked black pepper and serve.
